This recipe is from my mother's mom. It is so tasty and easy to make. Sweet but rich with flavor!
6 Boneless chicken breasts
(I prefer to pound mine a little, or even cut it into strips yummy)
For Sauce:
1/2 C. honey
1/2 C. butter
1/4 C. regular yellow mustard
1 tsp. salt
1 tsp. curry powder
Combine in saucepan until butter is melted and mixed together. Place thawed chicken breasts into a baking pan and pour honey-mustard sauce over it.
Bake @375* for about 45 min. or until fork goes in easily. Serve with rice.
The sauce on the rice is so absolutely delicious so serve it in a gravy boat!
Yummy Orzo
This is another easy recipe and always a crowd pleaser. I found it somewhere on the internet. I add shredded cooked chicken to mine. Oh and if your don't have any parmesan cheese, don't fret because it is still great without. Get creative with it and add different veggies like asparagus, broccoli, celery, etc. Also increase or decrease the amounts of veggies as you like. You can't mess it up!
2 Tb. butter
1 C. uncooked Orzo (its a noodle that looks like rice)
2 tsp. minced garlic
2 potatoes, peeled and diced
1 carrot, sliced
1 onion, chopped
1 tsp. dried Italian seasoning
salt & pepper to taste
3 C. Water
1 cube veg. or chicken bouillon
1 C. freshly grated parmesan cheese
Melt butter in a meduim saucepan over med. heat. Stir in Orzo and garlic and saute until lightly browned. Place potatoes, carrot, and onion in saucepan. Cook and stir until tender. (I don't wait too long depending on how brown my orzo is).
Season with dried Italian seasoning, salt, pepper.
Mix water into saucepan. Stir in veg/chicken bouillon until dissolved. Cover, reduce heat and simmer 12 min. or until orzo is tender and most of the liquid is absorbed. Top with parmesan cheese. Add shredded chicken or serve with chicken.
It's like deluxe rice-a-roni! Oh, and if you want vermicelli like rice-a-roni, just break up fine spaghetti into bits because that is all it is!
Heavenly Breadsticks
3 1/2 C. flour
2 Tb. sugar
1 Tb. yeast
1 1/2 C. warm water
1 cube butter (you can use half just fine if its too much fat for you)
1 tsp. salt
parmesan cheese
garlic salt
Mix flour, sugar, salt, yeast, and warm water. Let rise for about 45-60 min. Melt butter and put in a jelly roll pan.(I just do it in on the pan in the oven...fewer dishes). Roll out dough to the size of pan. Cut into strips. Fold strips in half and twist. Roll in butter and place on pan. Sprinkle with garlic salt, and then parmesan cheese if you prefer. Let rise until doubled. Bake until golden brown at 400* F, about 10-15 minutes.
*Roll in cinnamon and sugar instead of parm. cheese and garlic salt. Makes a really good treat!
Fluffy Apple Pankcake
4 servings
Similar to a german pancake, just has apples and spice! So good with whipped cream and syrup!
1 C. whole milk
4 large eggs
3 Tb. sugar
1 tsp. vanilla extract
1/2 tsp. salt
1/4 tsp. ground cinnamon
2/3 C. all purpose flour
4 Tb. (1/2 stick) unsalted butter
2 apples, peeled, cored, thinly sliced
3 Tb. packed brown sugar
Powdered sugar (optional)
Preheat oven to 425*F. Whisk milk, eggs, sugar, vanilla, salt, and cinnamon in large bowl until well blended. Add flour and whisk until batter is smooth. Place butter in 9X13 glass pan. Place in oven until butter melts ~about 5 min. Remove from oven. Place apple slices in overlapping rows atop butter in dish. Bake about 10 min., or until butter is bubbling and beginning to brown around edges of dish. Pour batter over apples and sprinkle with brown sugar. Bake until puffed and golden brown, about 20 min. Sprinkle with powdered sugar if desired. Serve warm.
